North Indian Cuisine
North Indian cuisine is a part of Inidian cuisine and presents its exotic Indian dining table. North India has extreme climates: summers are hot, and winters are cold. The region of Northern India includes the Pakistani provinces, which are Punjab, Sindh, and Indian states, which are Jammu and Kashmir, Punjab, Haryana, Himachal Pradesh, Rajasthan, Uttarakhand, Delhi, Gujarat and West-Central Uttar Pradesh. In addition, the geographical position explains that North Indian cuisine has strong Central Asian influences both in its culture and food.
North Indian cuisine includes: Awadhi cuisine, Bihari cuisine, Bhojpuri cuisine, Kumauni cuisine, Cuisine of Kashimir, Mughlai cuisine, Punjabi cuisine, Rajasthani cuisine, and Cuisine of Uttar Pradesh. Overall, North Inidian styles of food are moderately spicy and creamy gravies. The use of dried fruits and nuts are common in everyday foods. Generally, dairy products like milk, cream, cottage cheese, ghee -clarified butter- and yoghurt are main important ingredients.
Tandoori roti and naans- which is bread made in a clay tandoor oven-, stuffed parathas -which is flaky indian bread with different kinds of vegetarian and non-vegetarian fillings-, and kuchas- which is bread made from fermented dough- are originated in Northern Indian region.
The popular dishes are Mutter Paneer, Biryani, Pulaos, Daal Makhani, Dahi Gosht, Butter Chicken, Chicken Tikka, Fish Amritsari, Samosas, Chaat, and Motichoor Laddoo. Mutter Paneer is a vegetarian north Indian dish consisting of peas and paneer in a tomato based sauce, spiced with garam masala. Rice and bread, such as naan, paratha, poori, or roti, are served together with Mattar paneer.
The next food is called Dal makhani, or dal makhni. It means buttery lentils. The primary ingredients are whole black lentil, red kidney beans, butter and cream. Because of the use of cream, the dish gets richer and more delicious.
Finally, Samosa - it is author's favorite- is known as sommosa or sambusa as well. It is a fried or baked dish with a savoury filling, such as spiced potatoes, onions, peas, lenetils, macaroni, or noodles. Its size is varied but the ideal shape is triangular or tetrahedral. Interestingly, Indian samosas are ususally vegetarian and served with mint chutney.
